Travellers passing through Terminal 1 Domestic post-security can now taste something new: Brasa Peruvian Kitchen, a flavour-first quick-service concept built around bowls, salads and protein smoothies.
The brand is the work of Toronto-based founder Michel Falcon, who set out to introduce more people to the culture of Peru through food that feels familiar but tastes distinct, grounded in ingredients from the Pacific Ocean, the Andes Mountains and the Amazon Rainforest. In the kitchen, Chef Guillermo and Chef Jose bring hands-on Peruvian culinary expertise to every dish.
